Apocalypse notes
Straightforward method for chocolate chip muffins that will do for a lovely mid morning snack all week :)
This recipe makes about 14 medium muffins. Once they cool I wrap each one individually in cling film and store in a tin to keep them fresh (and to make sure I don’t eat them all at once).
Tip: If you have yoghurt, use 200ml milk and 2 tablespoons of thick plain yoghurt instead of the full 260ml milk, as it makes for moister buns.

Ingredients
375g flour
4 tsp baking powder
1/2 tsp salt
200g granulated sugar
1 tsp cinnamon
2 tbsp vegetable oil
2 large eggs
260ml milk (or 200 ml milk and 2 tablespoons thick plain yoghurt for a moister bun)
60g unsalted butter
1 tsp vanilla extract
250g chocolate chips
Method
Prepare the oven and tray
Pre-heat the oven to 220 celsius. Take your bun tray and brush with a thin layer of butter and set aside.
The dry bits
Add the flour, baking powder, salt, sugar, cinnamon to a bowl and lightly mix together, then set aside.
The wet bits
Whisk the eggs and sugar together. Melt the butter and whisk into the eggs with the oil, milk and vanilla.
The mixy bit
Fold the wet mixture into the bowl of dry mixture in thirds, and gently mix together.
Stir in the chocolate chips.
The baking bit
Divide the mixture across the bun tray and fill each one level to the top.
Bake in the oven for 30 minutes at 220 celsius for the first 5 minutes, then without opening the oven, reduce the temperature to 180 celsius for the remaining 25 minutes.
