Apocalypse notes
Easy potato bread recipe.
Handy when fresh bread not available.
No oven and no yeast / rise time required, and you only need these four basic ingredients.
Just mash the potatoes and get them in the frying pan.

Ingredients
6 peeled potatoes
Tablespoon butter
Pinch salt
1/4 tea cup of flour (about 50g) (and some extra for cooking)
Method
The potato bit:
Boil the peeled potatoes and simmer for about 20 minutes until soft in the middle.
Turn off the heat, drain the potatoes then leave in the pot to dry off for a few minutes.
Mash the potatoes with a fork or masher until fluffy.
The mixy bit:
Add the butter and flour and mix up to a sticky dough.
Scatter a handful of flour on a clean surface and roll out the dough into a circle about 30cm wide and 1/2cm thick, depending on how thick you like potato bread. (I prefer them thinner with more crisp when baking at home and it makes a few extra pieces too).
The cookery bit:
Scatter some flour over your frying pan and turn on a medium heat, then brown the potato bread each side for 4 -5 minutes, then transfer to your nicest plate.

Eat straight away with a knob of butter, or serve along with bacon or fried sausage for a tasty northern breakfast. If you’re keeping it for later, toast it up again in the toaster as it’s best served hot.
