best hot chocolate
Apocalypse notes
Delicious, thick European-style hot chocolate.
This chocolate-bar in a cup is not a pandemic necessity, but everyone needs a treat once in a while.
Apocalypse recipe rating 7/7
Ingredients
2 cups of milk
1 tbsp light brown sugar
200g dark chocolate bar 70% cocoa, chopped
Optional: marshmallows
Method
Combine 1 cup of milk and brown sugar in a large heatproof bowl and set it over a pot of simmering water on the stove (creating a double-boiler). Heat the milk mixture until steaming, whisking occasionally.
Whisk the chocolate into the hot milk, keeping the bowl over the double-boiler to continue heating it. Then continue to whisk for another 3 minutes, until shiny and thick.
Slowly pour in the rest of the milk, whisking as you go, and heat for 4-5 minutes. Whisk occasionally until the mixture is steaming.
Remove the bowl from the pot of water and pour the hot chocolate into mugs.
Serve immediately.

Tip: Adding a little bit of spice (1/4 tsp cayenne pepper, allspice, cinnamon, vanilla) will bring it closer to the Mexican traditional style - recipe coming soon.
