Apocalypse notes
These are really tasty quesadillas that yield about 12 pieces using 6 wraps.
Mix up all the ingredients in one bowl and fry on the pan for 5 minutes, they’re super quick if you’re ravenous and trying to stop yourself ordering pizza.
If you have no taco or fajita sachets hiding in your cupboard, you can find loads of simple recipes online to make your own using chili powder, garlic, paprika, salt and pepper.

Ingredients
1 garlic clove
1 red onion
400g / 1 tin black beans or kidney beans
140g / 1 small tin corn (add more if you have a big tin)
250g grated cheese
1 sachet taco seasoning mix
6 large tortilla wraps
Method
Chop the onion and crush the garlic and place in a large bowl.
Drain and rinse the black beans and corn and add to the mix.
Stir in the cheese and add the taco seasoning and mix it up well (make sure no lumps of garlic stuck together).
Lay out a tortilla wrap on a clean surface, add about a half a cup of the mix and spread over half of the circle.
Fold the tortilla and complete the above step with the rest of the tortillas.
Add the folded tortilla to the pan two at a time, and fry for 3 minutes each side on a medium heat, until golden brown all over.
Cut each crescent in half and serve straight from the pan with some sriracha sauce or ketchup.
