Make your own special Christmas nibbles. The shop-bought tubs of honey cashews always disappear quickly at our house, so quickly that my mum now has to keep a secret stash of them to make sure they last past Christmas eve.
Turns out these are super quick to make yourself and it’s usually much less expensive to pick up a 200g bag of plain cashews from the local value supermarket; just follow the steps below to Christmas-spice them up.
Added bonus: the cinnamon spice in these will make your kitchen smell super Christmassy and everyone will think you’re brilliant.

Ingredients

Sheet of baking paper, baking tray, saucepan, silicone bowl scraper/spatula
For the nuts
1tbsp (or 15g) butter
2 tbsp honey
1/8 tsp cinnamon powder
1/2 tsp vanilla essence
200g cashew nuts
25g granulated sugar
2 pinches salt
Method
Pre-heat the oven to 180 celsius, line a baking tray with baking paper and set the cashews out onto the paper.
Add the butter and honey to the saucepan, and turn to a low heat. Stir until melted together. Add the cinnamon and vanilla to the sticky, buttery mix.
Then, spread the nuts in an even layer on the baking tray.
Pour the butter mix over the nuts and mix together with the spatula until all the nuts are covered. Place in the oven for the first 5 minutes, then lift them out and give a stir to cover them in the liquid. Put back in the oven for 5 more minutes then lift them out again, mix them up, then put back in the oven in a flat layer for a final 5 minutes.
Remove from the oven and add the mix to a clean bowl. Pour over the sugar and a pinch or two of salt and mix with the spatula until the nuts are well covered.
On a cool surface, lay out a new baking sheet (or lift the old one off the hot tray and place on the worktop) and spread the nuts out in a flat layer to cool off. Once cooled, break apart any nuts that have stuck together with your hands.
Serve or store in an airtight container.

Tip: Using the baking paper makes this is a-mess free recipe; your hands won’t even get dirty.
