Apocalypse notes
Trusty banana bread that turns out a tasty loaf every time.
My usual go-to recipe uses plain flour so that’s what I’ve added here as it always works out great. With the shortage of flour I made this today using self-raising flour and it worked just fine, it just comes out a bit airier than the plain flour.
This recipe doesn’t need a topping, but for extra tastiness, try mixing 1/2 cup peanut butter with 1 cup of icing sugar mixed and 2-3 tbsp milk. Spread it over the top of the loaf and chill for an hour.

Ingredients
2-3 ripe bananas
75g melted butter (1/3 cup)
150g sugar (3/4 cup)
1 tsp baking powder
1 pinch salt
1 tsp vanilla extract
1 egg (beaten)
200g plain flour (1+1/2 cups)
Method
Pre-heat fan oven to 175 degrees celsius.
Peel the bananas, add them to a large bowl and mash them until smooth.
Pour in the melted butter and mix well.
Add the sugar, baking powder, salt, vanilla extract, and the beaten egg and stir it all together.
Finally add the flour and use a bowl scraper to mix it all up.
Grease a loaf tin with a thin layer of butter, and use the bowl scraper to get every last bit of batter into the tin.
Slide the tin in the oven, and bake for 40-45 minutes.
Remove from the oven and leave to cool.

Once cooled, slice it up and serve. Tastes great dusted with icing sugar!
