Apocalypse notes

Simple recipe for hearty soda bread cooked on a griddle pan.

Goes perfect fried with an Ulster Fry, or toasted and served hot with a slab of butter and jam.

Note: if you dont have any buttermilk, add a teaspoon of vinegar or lemon to one cup of dairy milk and leave for 5 minutes to create the same buttermilk effect.

Ingredients

1 cup plain white flour

1/2 teaspoon baking soda

1/2 teaspoon salt

Splash of buttermilk

Method

Mix the dry ingredients together in a bowl and start with a splash of buttermilk. Mix the dough and once at a a thick workable consistency, it is ready to be cooked. I should be a very thick bread dough and not runny at all.

Meanwhile warm your griddle or frying pan in preparation. Dust the griddle with a little dry flour to stop the farl mix from sticking to the pan. Turn the dough out onto a floured board, knead lightly to form a round shape, then flatten lightly with a rolling pin.

Cut the circle into 4 or 8 wedges and bake them on the pan for 5 - 10 minutes each side.

When the underside has formed a skin, turn the wedge over and turn down the heat if neccessary as the bread cooks on its second side.

After a cooking the second side, use a skewer to check if the farl is cooked through. Keep cooking until the skewer comes out clean, as you don’t wat soft uncooked dough in the centrre of your farl! When the skewer comes out clean its ready.

Let the farls cool slightly on a wire wrack. For best results serve warm with butter.
