Apocalypse notes

Easy, tasty Greek pie you can assemble for a last minute lunch party using only 5 ingredients.

Ingredients

300g bag of spinach leaves

150g jar sundried tomatoes (chopped; and keep the oil for brushing the pastry)

100g feta cheese (crumbled)

2 eggs

125g filo pastry (8-10 sheets)

Method

Filling

Add the spinach to a large frying pan, sprinkle some water and fry for 2mins until just wilted.

Tip spinach into a sieve, and press out the excess water.

Roughly chop the spinach and sundried tomatores.

Mix spinach, tomatoes, feta and eggs together in a mixing bowl.

Pastry

Unroll the filo pastry. Take the first sheet and brush it liberally with sundried tomator oil. Drape oil-side down on a 9in // 22cm cake tin, so that some pastry is hanging over the side.

Brush oil on another piece and moving round the tin, place it on the tin (overlapping with first piece). Keep going until you have 2-3 layers of pastry covering the sides and base of the tin.

Spoon the filling into the pie.

Pull up the sides into the middle and scrunch it in the top, just make sure the filling is covered.

Baking

Heat the oven to fan 160C and cook for 30mins, until the pie is crisp and golden.

Remove from the cake tin, slice into wedges and serve with a greek salad.
