pesto pasta
Apocalypse notes
Simple additions to a jar of pesto to brighten up your pasta, for a crowd pleasing dish that takes less than 15mins to prepare.
Ingredients
200g spinach leaves
500g fusili pasta
200g vine tomatoes
2 tbsp balsamic vinegar
1 jar pesto
Method
Filling
Cook the pasta.
Add the spinach to a large frying pan, sprinkle some water and fry for 2mins until just wilted.
Cut the tomatoes in half, add to a mixing bowl and stir in the balsamic vinegar.
Add in the spinach and pesto, and mix it together.
When the pasta is ready, add the ingredients from the bowl and mix well together.

Serve in a big bowl with crusty bread and top with shaved parmesan if you’re feeling fancy.
